This easy lemon squares recipe is sure to become a family favorite at your house as much as it has been at mine.
This recipe came from Grandma’s recipe file so you know it has to be good. Grandma always knew how to make the grandkids happy and wanting more.
If you love the flavor of lemon, you are going to absolutely love these lemon squares. They are not only super delicious but they are also super easy to make.
1 cup flour
1/2 cup butter
1/4 cup powdered sugar
Allow the butter to soften at room temperature for about one hour.
Blend together the flour, butter, and powdered sugar with a fork or with a slotted stirring spoon.
Press the mixture evenly into the bottom of an 8-inch square baking pan.
Bake for 20 minutes at 350 degrees.
Remove the crust from the oven and prepare the lemon filling recipe as described below.
2 Tbsp lemon juice
1 cup sugar
2 Tbsp flour
1/2 tsp baking powder
Combine the eggs, lemon juice, sugar, flour, and baking powder and whisk until thoroughly blended.
Pour the lemon filling into the crust and spread it out evenly with a rubber spatula.
Bake for 25 minutes at 350 degrees.
Allow lemon squares to cool completely before applying frosting to the top.
2 Tbsp butter
1 tsp vanilla extract
1 Tbsp milk
1 1/2 cups powdered sugar
Allow butter to soften at room temperature.
Blend together the softened butter, vanilla extract, and milk.
Add the powdered sugar and blend until smooth.
Lightly frost the top of the lemon squares.
Refrigerate or freeze lemon squares to maintain freshness.
